Go Taksim square for gay bars.
Good restaurants are near Bosphorus side.
Traditional food in Taksim area: Borsa, Bereket.

I wish I can come to help you. I lived in Istanbul . First try to restaurants around the hotel. ask hotel bus boys they know better. too many gay bars but you have to ask right person and if I am you I preffer luxury ones that I can feel comfortable. go to big hotels bar you can find your way.
I have heard the Gay bars are around the Taksim Square area.Please be careful,do not have all your money in one pocket and do not leave your drink unattended.

Don’t know about the gay bar but a good restaurant that you will love is Vogue.
